1. I found out yesterday that I've been chosen to be a 2012 Ambassador for Pacers Running Store. This is my third year as part of the group and I absolutely love it. Before I became an ambassador, I was a huge fan of their store and the many races that they put on each year, so it's been awesome being more involved. I'll be volunteering at a lot of the races and definitely running as many as I can. If you are a local, look for me at the races! 2. My “go to” breakfast – crustless quiche
I was recently discussing breakfast with another "Team Tough Chik" runner. I'm kind of boring I have two go to breakfasts. If I'm running more than 6 miles before lunch, I eat a peanut butter and jelly sandwich on whole wheat bread. This seems to be the perfect carb + protein combo for me and has never (*knock wood*) upset my stomach on a run. If I'm not running, I eat a piece of crustless quiche. I promised Elizabeth of See Lizzie Tri that I would post the recipe of the quiche. GOTR and a new soup for you
You can see me at about the 1:15 point. ;o) I really want to participate in "What I ate Wednesday" one of these days, but that would require two things: 1) planning and pictures, neither of which happen often around here, and 2) admitting to the weird combination of foods I eat. I will say that the HBBC has definitely gotten me to pay more attention to my fruits and vegetables. Yesterday I had a veggie burger topped with lettuce, spinach, avocado, and a boatload of salsa for lunch. It was yummy, filling, and hit at least 4 servings of veggies. Jewish Mother’s Split Pea Soup
This has been one of the more miserable falls that Virginia has had in a while. We seem to be getting rain at least a couple of times a week. A lot of us are beginning to wonder when Virginia got placed just outside the *other* Washington. For most of October, my mood has matched the weather. Adding a layer of stress over what is already my craziest month of the year and then throwing a ton of rain on top of that? Yeah. Depression was rearing its ugly head, only held at bay by a few really awesome runs. It's raining again today, but all is sunny in me. Last man standing
Everyone in my house, except me, is sick. I feel fine. *knock wood* Thankfully, my boys are old enough that I can leave them home with Beer Geek, even in his "I feel like crap" state. Otherwise, I think my head would explode if I couldn't leave the house. How am I staying healthy? Well, first, I ran 6 lovely miles today. I hit my planned pace exactly, despite a few wicked hills. I love being back to the point that 6 miles is relatively easy. Also, winter has returned, so I'm making my famous vegetarian tortilla soup.
