
Yesterday’s Elf4Health challenge was to “Eat the Rainbow”. I tend to be pretty veggie centric anyways, but I made an effort to add extra veggies to every meal. Added to the challenge was that I’m refusing to go to the grocery store until we finish all the produce and leftovers in the fridge.
Red: red pepper, tomatoes in salsa and lasagna
Orange: sweet potato, carrots
Yellow: banana
Green: arugula, romaine, green beans
Blue/Indigo/Violet: Kohlrabi, raisins (we had no grapes or blueberries or anything else in the house, so this was hard for me.)
White: Onions, cauliflower, mushrooms, cucumber (not on the rainbow per se, but they do have lots of good for you things in them)
Today won’t be quite as colorful, but I’m aiming to still eat veggies with every meal and fruit for snacks.
For the Elf4Health challenge, we are supposed to go without makeup today. That’s me most days and today I have a kid home sick, so that’s not challenging at all. I may have to come up with some other way to challenge myself (I’m still sore from the 100 burpees on Sunday…)
And the big news of the day…
We are going to Ireland!
OK, that’s not actually the big news. That’s been in the plans for quite some time.
The big news is that I’m hopefully going to run a half marathon while there!!!
There are three options, so I’ve just got to figure out if we can be there one of the weekends that has a race. Most of our visit is about meeting distant relatives from Beer Geek’s family, so I’m beyond ecstatic that Beer Geek is cool with me finding a race, even though it will add extra driving.
2014 is looking to be an awesome year!!!

OMG. That is crazy awesome. Destination races are the best, but I can’t even imagine how good the scenery will be in Ireland!
Yeah, the pictures I was looking at were pretty awesome. The one race is super hilly though. (Not that I ever seem to run a non-hilly race, sigh.)

That’s awesome! I was in Ireland last summer and wanted to run a race while I was in Europe (I was in Ireland, London and Germany), but there were zero races that coincided with my dates and locations. I was super bummed but settled for watching the men’s and women’s marathon Olympics races from the sidelines which was TOTALLY enough for me 🙂
I hadn’t even thought about it, but a runner friend mentioned registering for a race in Ireland and I was like OH! I want to do that!

Running LOL. And beer. Hubby is much more excited about the geneology stuff.
I love destination races, my only advice is to hopefully put the race on the front end of the trip because you don’t want to worry the whole trip about eating heavier foods and drinking beer and having a disaster race.
