Potato Leek Soup to warm you on a cold day

Potato Leek Soup to warm you on a cold day

Soup is one of my favorite foods. Yes, the entire category. In fact, when I was pregnant with Jones, I craved soup at every meal. Since Virginia has decided that today is winter, this potato leek soup is on the menu.  I need to make it while it's actually cold enough to enjoy it. You think I'm kidding that we are getting one day of winter? Yesterday it was in the mid-60s and I ran in a skirt and short sleeve shirt! Today it's a high in the 30s. Sunday it will be in the 60s again. Go home, Mother Nature, you are drunk! Anyways, I love this potato leek soup as it is super easy to make, has lots of veggies, and is quite tasty. Add a scoop of Greek yogurt and you've got some extra protein as well. Win/Win! Potato Leek … [Read more...]

Turkey Sweet Potato Soup and more

Turkey Sweet Potato Soup and more

It's almost Thanksgiving day and we all know what that means! Leftovers! I enjoy turkey dinner on Thanksgiving, but I'm not one to sit down to meal after meal of leftover turkey, sweet potatoes, and the various other sides. So, I immediately turn the leftovers into other meals if I can. Since today's Friday Five 2.0 topic with Running on Happy and Fairytales and Fitness is "Holiday Foods", I'm going to share some of my favorite ways to use up the leftovers. Soup! I make a wicked good turkey and sweet potato soup. I've never tried it with mashed sweet potatoes, but I bet that would work as well.[amd-zlrecipe-recipe:48] Sweet Potatoes with candied walnuts - OK, this is totally cheating. I intend this to be on my T'day table. And I … [Read more...]

5 Soups Friday!

5 Soups Friday!

I love soup. I could literally eat it every meal, all year round.  In fact, when I was pregnant with Jones, I craved it all.the.time. I had some sort of soup at every meal for MONTHS. (Until I ordered a gag inducing soup at a Mexican restaurant and then didn't eat soup for months...) Anyways, when I saw that the Friday Five topic from Cynthia, Courtney, and Mar was Favorite Fall Foods, I yelled "SOUP" and started cheering.  Ok, maybe I just thought to myself, "oh, I have some favorite soups". Whatever. Same thing. [Tweet "Yummy + healthy soups to get you through the winter. #fitfluential #healthychoices #crockpot"] … [Read more...]

WIAW + slow cooker recipe

WIAW + slow cooker recipe

Every year, I suffer through Virginia's summers.  90+ degrees with matching humidity = pretty much all of July and August + some of June and September.  In exchange, Virginia usually delivers me a reasonably cold winter with not a lot of snow. Sometimes Virginia does not live up to her end of the bargain.  Sometimes we get FEET of snow.  Sometimes we have wicked cold weather.  While we haven't had feet of snow this year, we've had a fair amount and we've had crazy cold weather.  This week (after a Monday where the highs nearly hit 60!), we have both. Bring on the treadmill and the comfort food! I did 4.7 miles on the 'mill yesterday and will do around 6 today.  Who knows when I'll feel safe running outside again.  (Snow removal … [Read more...]
