Without any really good pictures because I’m totally lame…
We have been slowly revamping our diets around here. I guess you’d call it more of an attempt to eat clean. I’m going for more of an emphasis on unprocessed, whole foods.
My kids (like many kids) LOVE chicken nuggets. Love them. Could subsist entirely on nuggets. Over the last year, I’ve worked really hard to expand their horizons and nuggets are no longer a several times a week meal, but they are still a frequently requested meal. As in, if I ask the kids what they want instead of just putting food on the table, the answer is 9 times out of 10, nuggets. (In case you are wondering, that 1 out of 10? Shoo asks for PB&J, Jones asks for Trader Joes Mahi Mahi patties.)
Anyways, I’ve tried a few times to make my own, but never been successful. They were either dry or the coating broke off or they just weren’t that good. Finally, last week, I stumbled upon a recipe that worked! I left out the spices, but they were really good. Good enough, in fact, that Jones requested those over the ones in the freezer. Now I just need to figure out a healthier coating and whether they can be frozen or not ’cause, honestly, the whole point of nuggets is convenience. I’m pretty excited that just a few tweaks provided us with yummy cod nuggets for dinner on Monday as well.
I’ve also been using my crockpots more. I like the convenience and it helps warm up my kitchen. Yesterday was a two crockpot day! I put my favorite split pea soup in the one and a pork sirloin piece in the other. I admit, I used Seeds of Change Korma sauce on my pork, but making my own sauces is on my list for 2014. Also, I won’t be making that soup in the crockpot again. It took FOREVER and didn’t really save me any time.
I also kept out some of the sauce and threw it on leftover cauliflower with some chickpeas. I’m pretty sure that curry sauce on cauliflower is one of the best foods ever! I’m probably the only person who considers cauliflower a comfort food. ;o)
In other news, I wimped on running yesterday. It was SOOO cold here. And the treadmill just didn’t appeal to me. Add in kids who started two hours late with 40 minute apart start/end times and I feel like I spent my whole day taking kids to and from school. Today is better, but I have a wicked headache, so I think I’m going to do a slow easy run on the treadmill (I know, the whole point of waiting was to run outside, but a feels like of 6 when I’m already not feeling well just doesn’t excite me.)
Maybe I should have named this post “Whiny Wednesday”…
Tell me some of your favorite quick meals. We are in a rut, but life is getting busy and soon I’ll be running hours every day…

Super easy to make, I think he likes the BBQ sauce. I wish I had a healthier BBQ sauce recipe, baby steps.
I totally agree on crockpot convenience and the fact that it heats up the kitchen. Our house is very old so it doesn’t heat well. So anything that helps warm it is okay by me..and yummy of course.
I love my slow cooker, it saves me when I’m at uni all day and can’t be bothered cooking once I’m home. I might have to try those chicken nuggets, I used to love them as a kid!
