I recently had the opportunity to try out some of the Attune Erewhon cereals. Attune professes to be “simple ingredients. simply made.” All of their products are made in the U.S. Most are organic, non-GMO, whole grain cereals and many are gluten free. I was excited to try them out.

I was sent three boxes: Corn Flakes, Crispy Brown Rice, and Cocoa Crispy Brown Rice. I’m not really a cereal eater, but Shoo has been really enjoying the corn flakes. Me? I’ll admit there have been a few bowls of cocoa crispy cereal with vanilla coconut milk as a dessert. (YUM!) But none of us really eats plain rice crispy cereal. What to do? Duh, make rice crispy treats.
Have you looked at the ingredients for store bought marshmallows? Corn syrup (some brands use HFCS), artificial colors, artificial flavors, other chemicals to keep them puffy… I’ll admit we do eat them on occasion, but it just seemed wrong to use them on Erewhon cereal. (I think there are better versions at Whole Foods or Trader Joe’s, but I ddn’t get a chance to look.)
So, what’s a girl to do? Make homemade marshmallows!
Ingredients:
water
sugar (I used fine white granulated this time, next time I’ll try my usual organic, less processed sugar)
gelatin
salt
vanilla extract
Full instructions are here. I followed the recipe pretty closely.




After creating my marshmallows, I lightly oiled a microwave safe bowl, took a big chunk of marshmallow, and melted it for 1 minute. I added crispy rice until it seemed the right proportions (see why I’m not a food blogger? I never measure things LOL) and pressed it into an oiled cookie pan. Some people like to use butter in their treats. I don’t see a reason to add the extra calories and fat.

If I do it again, I’ll skip the cool into marshmallows step and just add the crispies to the fluffy marshmallow after mixing. If actual marshmallows aren’t your goal, it’ll save time. They are much firmer and less sticky after a night in the refrigerator (if you can manage to save any that long).
Also? It’s a good thing I ran 12 miles yesterday (in Vibrams. in 70+ degrees). I did a lot of “quality control” as I went along LOL.

So yummy! We get the Erewhon crispy rice cereal. I have a crispy rice treats recipe that uses brown rice syrup as a more healthful alternative to white sugar and some tahini as a thickener.
I wonder if your homemade marshmallow biz would work well as an ice cream topping?

I am going to be trying a couple of them too. I love their Uncle Sam’s– I mix that in with my other cereals every morning. Good for you for getting creative and making your own marshmallows! 🙂
Never made my own marshmallows, but this sounds yummy, and I could veganize it! Mmmmm.
What a great idea! Those homemade marshmallows look awesome. There are healthier options at whole foods, but they’re SO expensive… you definitely went about it the right way. 🙂 I also found a recipe for Luna bars that I’ve made with brown rice puffs– basically just equal parts pb and honey or agave nectar with a dash of vanilla, smash into the pan and drizzle with melted chocolate, then freeze so they stay together. Another great treat that’s good for a post 12 mile run kind of day!
