Selective amnesia is a scary thing. It’s the reason that we are able to have more than one child. It’s the reason we run more than one marathon. The euphoria we feel takes the edge off the memory of how hard or painful it was.
I’d already forgotten how much time training takes. Never mind that last March I ran 200 miles and basically did nothing but run…
This time I’m training differently. My body is capable of higher mileage than I ever thought possible as I discovered during my Mainly Marathon series’ trainings. With my first marathon, my highest mileage week was 35 miles. With my second marathon, my highest mileage week was 40 miles. This past week, my mileage was 32 miles – 29 of those were part of my training plan miles. I have 15 weeks left of training.
With an average pace of 11 minutes per mile, that means I’m already running 6 hours per week and it’s just going to go up from here. Oy.
So, what does that have to do with 12 easy meals? Well, work + running + Jones playing in 3 orchestra’s for the next couple of weeks (and then 2 for the rest of the spring) + Shoo playing in 2 soccer leagues starting in March = there will be a lot of quick and easy meals in our future. I think the crockpot will be my best friend.

I love to make healthy quick meals and the best are stews, casseroles and chili because you can freeze those suckers and put them in the microwave.
I don’t know where runner mothers would be without a crockpot. I use mine a couple of times a week. Makes life so much easier.
