We are in the middle of our summer visit to Wisconsin. Summer in Wisconsin always means tons and tons of vegetables, most of them grown in my parents’ garden. (Ok, and maybe a few fried things that really should be fried *cough*oreos*cough*, but I haven’t had fair food yet.)
I’ve been eating fresh veggies at every.single.meal. Even breakfast.

Breakfast yesterday:
Kohlrabi and grilled zucchini with parmesan cheese
Lunch was a smorgasbord of veggies:
Cottage cheese with homemade salsa
Cucumber salad
“Garbage” salad
Oh,and chicken soup
Dinner. You guessed it. More veggies:
Okra
Cantaloupe
More cucumber salad
Not pictured:
Corn on the cob
Pork with homemade salsa
And what did I snack on? Hmm…
Seriously, if I eat more tomatoes, I may become one. But don’t worry, today we are heading to the county fair. I’m sure the options for deep fried everything will overwhelm me.
Thanks, Jen, at Peas and Crayons for giving me a reason to document my love affair with veggies.
Stay tuned – tomorrow I’ll be starting a giveaway of a NatureBox, something that is quickly becoming one of my summer staples.
reason #765765 why I ADORE the summer, too.
That is a lot of veggies! I must admit I’m not the greatest veggie eater. I like it but don’t eat lots of it.
Seriously, what’s better than a summer tomato!? I’m going to be so sad when their season is over
I just wish I could grow them myself. I can only get them (without paying for them) at my mom’s house.
You can never go wrong with veggies! I love almost every vegetable!
I love nearly every veggie but beets. Note that there were no pictures of my mom’s beet salad included, mostly because I didn’t eat any.
Girl, I think it’s safe to say you got your veggie intake yesterday :).
