I’ve been struggling with my eating and with feeding my family since sometime in November. My work hours have increased, Jones is starting with a new orchestra, and Shoo needs to be kept busy on a daily basis so as not to destroy my house with a soccer ball. Add in the weather and my increase in mileage and I need some help to both feed everyone and keep myself on track.
So, when Gorton’s offered me the opportunity to try some of their baked and grilled fish and join in on the SparkPeople.com challenge, I jumped at the chance. We’ve bought their grilled fish in the past and enjoyed it, but I’d never tried the baked before.
To help me get started, Gorton sent me a lovely package consisting of a cookbook, the Spark story, Spark’s 28 day bootcamp DVD, an insulated bag, and some coupons.
First, let’s talk about the fish. Gorton’s new(ish) baked line. It currently consists of three types: haddock, tilapia, and salmon. My grocery store only had the salmon, so that’s what we tried. It was super simple – put in oven, bake, eat. Yeah, my kind of cooking. I even cooked it in my toaster over and it came out fine.
The salmon smelled really garlicky when I opened the packet, but it was actually quite good and the taste of the garlic was not overpowering. The fish was perfectly cooked (and I always overcook fish) and the flavors balanced nicely. There was quite a bit of sauce that could have been put on rice or vegetables if I’d been prepared for it. The boys refused to try it, but Beer Geek gave it a thumbs up. I’m definitely looking forward to trying another one! And if you go on SparkPeople.com, they actually have recipes that you can use the items in, like this grilled salmon flatbread!

Salmon is my favorite fish, but I used to live in Alaska, so I pretty much won’t buy a lot of the stuff available here on the East coast. I’m a salmon snob 😉
